What is monosodium glutamate, how does it enhance flavour, and is MSG safe to eat?

Munch on a packet of chips, slurp up a bowl of noodles or tuck into a salami sandwich, and there's a good chance you're also eating monosodium glutamate (MSG). So is it really as bad for us as we're led to believe?
